This wine is made from the fruit of specially selected old bush vines, around 80 years old on average, from the best plots within the Grupo Coviñas vineyards. With the passage of time the vines have had to adapt to the land, sinking their roots deep into the earth to reach down to water that is rich in nutrients and minerals. Carefully controlled production levels mean that only some 2,000 to 4,000 kilos of BOBAL are produced per hectare. The grapes are hand-picked and the wine is made using traditional methods, so VINO VETERIUM gains in complexity and body as it matures in casks of French and American oak used in a previous vintage. During the ageing period, which varies from between 3 and 6 months, the tannins become more rounded, adding structure and elegance to this uniquely characterful wine.
